Morocan Spice Mix

Mix ingredients thoroughly. Do not heat.

Morocan chicken breast:
Coat chicken breast completely in the spice mix, cover and refrigerate for 30 minutes. Broil or grill.

This lively blend also works well with sword fish or tuna. Just cut the marinating time to 15 minutes.

Also a nice change of pace when used in couscous flavored with a little lemon and sprigs of mint.

Put a table spoon or two of this spice mix into a cup of low-fat yogurt and marinate your fish or chicken in it, and grill as a brochette.

Store in an air-tight container in the refrigerator.

zest of 1 orange
2 ts ground cumin
2 ts ground coriander
2ts ground ginger
2 ts crushed hot chilis
1 ts corsely ground black pepper
1/2 ts turmeric
1/2 ts gound cinnamon
1/2 ts sea salt
1/2 ts unpasteurized honey
